Looking to cook a Mexican-style meal in a hurry? No need to spend hours in the kitchen after working all day. Taco-Stuffed pasta shells are simply to prepare, and have a gourmet taste. This recipe takes about 1 hour from start to finish.
16 jumbo dried pasta shells, prepared according to package directions
1 pound extra- lean ground beef
1 package (1.25 ounces) taco seasoning mix
1 cup water
1 can (16 ounces) refried beans
1 cup (4 ounces) shredded reduced – fat cheddar cheese, divided
1 jar (16 ounces) salsa, divided
¼ cup diced green onions
Sour cream (optional)
1) Cook beef in large skillet until brown; and drain fat. Add taco seasoning mix, and water; cook on low heat for 5 minutes. Add beans and ¾ cup cheese; mix well. Spread ¼ cup salsa over bottom of each of two 8 – inch square baking dish.
2) Fill pasta shells with beef mixture. Place shells in dish, open side up. Spoon remaining salsa over shells.
