Pizza Loaf??

Mmm.. my two favorite things – pizza and meatloaf .. . together at last.


1 1/2 pounds lean ground beef
1 large egg
1/2 cup seasoned bread crumbs or crumbled saltine crackers
1 1/2 cups roasted red bell peppers (or 1 jar)
1 can sliced black olives
2 tablespoons chopped fresh basil
1/2 cup shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
1 handful chopped grape tomatoes

Heat oven to 350°.Spray a loaf pan with cooking spray.

Combine in bowl ground beef, egg, and crackers or bread crumbs.

Add the roasted red peppers (chopped) but leave a few to the side for the topping. Do the same with the black olives, cheese and basil.

Bake the meat loaf for 1 hour and 5 minutes. When done, remove from oven and drain off excess grease. Top loaf with your remaining cheeses and veggies and cook for a final 15 minutes.
